Anyone run into this issue? If so, how did you handle it? Tried factory resetting and have been through every setting possible but not dice. Thanks for any suggestions.

Does it still show startup graphics - to rule out the screen being dead?
I had something very similar happen where I lost everything but the numerical speed number. Switching to one of the other modes (Sport/off road) fixed it as it seemed to do a reload to the dash.
I hate to say this but it seems to be the answer to more and more lately. Maybe disconnect the 12v battery. If nothing else has worked, you might try that. If it works, I don't know where that leaves you long term. I'm not guessing any service department near you will know any better how to troubleshoot it. Service would be the best help only if Ford knows there are some bad screens out there and they have a service bulletin or something on it.
Yes, I had that issue on my 2021 Mach-E. Ford attempted to install BlueCruise last April, and the instrument panel went dark. There is a process they have to try and reboot it that is documented now in FDRS (as a result of my failure, the process worked for mine). If that doesn't work, you would need a new instrument panel.
Did you try a full sync reset (not factory reset). Press and hold volume down and skip for a few seconds until the center screen reboots. It may bring back the gauge cluster.
