You might be correct. If the difference is so small, doing 45mph like he was might not even equal a 2 MPH difference. So they might assume only showing 0 or 1 different as the same.

Regarding their size calculations being off, I have noticed something odd. Using https://tiresize.com/calculator/ I sometimes get a different number then what is spec'd on that specific tire. Each brand seems to be slightly different.

For example the 285/75/17 mentioned in the OP shows a diameter of 33.8".
However if you look at the Open Country A/T III in that size it as a diameter of 33.9"
Different tires will have even larger variances. I am new to the world of tires so it was an interesting oddity I found.

Another question I have is. Does running different PSI change the diameter of the tire and therefore the rotations per mile? I would imagine an overinflated wheel is bigger? Also is a hot tire larger than a cold one?

Saw that but he has not given any feedback as to the ride or if the springs on those coilovers that are meant for a lighter ICE truck will work on the heavier lightning.
I got an email back from Fox stating "Fox does not have approved applications for the new F150 Lightning"

Also he hacked the sh*t out of the crash bars, although for a larger tire. Not interested in doing that.

On another note, I have arranged to have my truck be the test mule for Eibach to test fit springs at the end of August so I'll most likely wait until they do that before doing anything with the suspension. Hopefully Fox or Eibach will get both ends figured out shortly after.

Had the wrong size in the OP
The 285/70/17 show 32.7 on the tire calculator not 33.8

I didn't use the tire specs provided in the OP. I used the numbers provided in the video (295/70/18 @10:45).

I couldn't find the trim after watching the entire video but there was at least one spot I was able to zoom in and the charge cover looks like he has a platinum, which have 275/50/22s.

This is the tire calculator I used:

Yes, it's a common "problem" that the nominal size doesn't match the actual measurements. I alluded to that when I wrote, "They match a couple times but given the stacked inaccuracies between the dash, the phone, the actual tire sizes themselves, and the relatively small difference between the two makes it difficult to definitively state the odo was accurate" (emphasis added).

Sorry I didn't explain that well. We don't know what the actual tire sizes are without physically measuring them although slight manufacturing differences don't tend to create issues...except possibly in the case when the margin of error is only 1-2%. :)

Running different PSI does change the size of the tire and a hotter tire will be larger than a colder one but I'm not familiar enough with tire construction to state whether or how much the diameter might change due to temperature fluctuations.

I’ve had the wheels on for a few days now and they definitely affect range. Took a 200 mile drive yesterday with lots of highway speeds up to 80 and significant up and down hills. Left w 90% charge and got home with 17%. The last leg was mostly down hill from a local mountain town (6500 ft elevation) and my distance home (2600 ft) was 50 miles with my range saying 58. That grew from 8 mile difference to 36 without one pedal (wife hates it). Noise is noticeable also. Even tho tires are balanced and there’s no vibration in the steering wheel, I noticed passenger seat back shaking a bit now and the road noise almost sounds like a wobble. This morning after a night on the pro charger at 90% it shows range of 228

No issues with the 17s contacting anything? Bummer about the subtle vibration. I am debating hard on wheel size. I too prefer less wheel/more tire! And you were correct about the fox coilovers. Too soft of a spring. I ended up with spacers for now.
