Honestly, a Maverick or Ranger sized EV with a better range than my lightning? Take all my money. My biggest gripe with this truck is the size and the range (the range is my fault for not going to the flash.) I came from a Maverick, so maneuverability was my first big pain point.
I doubt you will find one. Rivians are marketed as an adventure vehicle, so it makes sense they would make a tailgate pad specifically for them to show off that bar, but I don't think you'll find one for the lightning that has the same.
I don't understand the need for deutsch connectors, am I not just running the wires from the ebay plug directly to the driver's side plug? Wiring anything more than a guitar pickup is new to me, so I'm not exactly sure all of the connection points...

Personally, I probably don't plan on keeping my truck long enough to notice the battery degradation, so I charged to 90% everyday. I figure if my charging habits make the battery go bad before the warranty's out then I get a new battery before the warranty is done lol.
