I have the 3.55, the 3.73 was not available with the 3.5eb and max tow when my truck was produced. (Might be now, not sure.) It did great. On my last trip I had a heavy head wind and it seemed to like 7th and 8th gear with the occasional 6th gear for up hill climbs at 70mph.
I have a very similar size and weight travel trailer and chose to go with the 3.5 EB for the very fact that the torque come on at much lower rpms. Rpms that you will actually be running in while pulling. This makes the power of the EB much more usable than the 5.0 when towing. I so far...
$300 seems kinda steep when the weathertech flaps are $80 for the set. Is there anything specific/special that makes them worth $300? I have had the weathertech flaps on numerous other trucks without problems.
I saw that Weathertech no drill mud flaps are now available for the 2021 F150. I am considering buying a set to keep the stones down on gravel roads but was hoping someone beat me to it and had pictures to share so I could see how they looked. If you have pics please post!
My last truck had 3.31 gears and I have a similar sized trailer... my 2021 lariat has the 3.55 gears with 3.5eb engine with the max tow. My last truck did good but my new one does great. Last time I settled for my truck and got what was available. I am so glad I found what I really wanted...

I had mine done with "Bullet liner" we don't have a local LineX dealer but it's basically the same and they sprayed the whole tailgate. They removed the tie downs and sprayed around or removed all the bolts, looks great. No clearance issues with the tailgate closing.
Another round of updates must have went out last night. Got one, no noticeable difference but also wasn't having problems (knock on wood.) And yes it will update without wifi. My truck was not parked at home on the wifi last night and it still updated.
Go big, at the very least get the max tow package but I would also get the 3.5l. RVs have a habit of getting bigger after a few years.... speaking from experience.
