For anyone following, we had another substantive rain event last night. However, I parked the truck angled, and just as I suspected - there was no water in the gutter, and as a result in the cab; which confirmed my poor design suspicions.
This is a poor design, not a fixable solution. Dealer will check the drains and confirm it drains properly just like I did. Aka. “Could not replicate issue”.
Furthermore, I re angled the truck and poured another, entire LITER OF WATER into each respective drain area, and just as you suspected — it drained fine.
Recommendation from a guy on the internet: If you’re expecting a heavy rain, do not park on flat surface.

Before this truck, my prior suv was 15 years old, had a sunroof that never got used either. Had many cars, never seen this before. It makes no sense. Especially on something this new.
Just got my truck back for battery repair. Not even a week later, pulling out of the driveway and it starts pouring water out of the sunroof controls. @Ford Motor Company
