"Massive moving target" is kind of a gross overstatement, especially when OP said same driving route and weather. I usually see maybe +3psi from cold to hot and that difference would probably be consistent with OPs +8psi pressure over stock (ie stock 36 psi cold temps to 38-39 psi driving temp...
You are right the cost differential isn't much, but I do know some people prefer the 12" screen and buttons over the more touch oriented 15" (myself included).

My original post was wrong. The rolling resistance, I think, is still the answer but it would because of the higher tire pressure lowering the rolling resistance, not the rim change.
The lighter wheels should make a difference in the rolling resistance, which is where the efficiency gain should be from… I agree with you that it probably isn’t the sole reason OP saw an increase.
That's a bummer. I decided with our 2 new EVs to not install the front license plates (well, dealer put it on my lightning so I have 2 little holes that are mostly plugged by the plastic from the screws drilled in, I bought a few plastic plugs but they don't fit as is and I don't think I want to...
I personally don't like the shifter simply because it makes the fold down armrest surface kind of useless to me, and in particular you literally can't use it while driving (so your passenger can't use it for something like a laptop).
I saw that as well, my only hesitation would be whether the tint truly matches or not. It would be really annoying (to me at least) if the color temps were slightly different compared to OEM/the rest of the truck.

Ultimately I think the best bang for buck system is a small battery rack with an inverter like the SolArk 15 https://www.sol-ark.com/sol-ark-15k-all-in-one/ which has a generator port that you can manually plug in the truck when needed in potentially extreme situations.
So I think normal driving in the snow 1-pedal could be fine, but my logic for disabling it is if you get into an uncontrolled situation (ie you start sliding) I think a driver is more likely to instinctively let off the pedal, which in snow may worsen the situation with the strong engine braking.
For what it is worth... the $7500 is likely to be extended several months as the "guidance" that was due 12/31/22 is delayed until at least March, and all vehicles between 1/1 and when the guidance is finally released will likely qualify for the $7500 (though I will say YMMV, until the IRS comes...
