The global problem is that the truck has 50+ modules with software developed and maintained by whatever supplier made the most sense to deal with whenever the feature was first developed. It's not so much an architecture as a ramshackle shelter. Sort of amazing it works at all.

I can't help with your network problem. In my opinion Google Maps via Android Auto is superior to Ford Navigation.
The guys who use FDRS should be able to let you know what that software is capable of. I think you would at least be able to update modules with it.
