Personally, I'm not concerned about structural rust... however I also wash my truck regularly so salt and road grime aren't around long.
Undercoating definitely works. I used to have an F150 that the previous owner had undercoated regularly; it didn't even have surface rust...it had black stuff...

The brake lights come on at a certain deceleration rate (1.3m/s2 in EU, manufacturer choice in US) or brake pedal application. If you aren't pressing the brake pedal there isn't a reliable way to determine if friction brakes are in use.
☝️This is the answer. Unless you have some reason other than your comfort level just leave it in auto and adjust the temperature up or down depending on how you feel.
