In a related note: I tried turning off the seat belt chime, it reverted to on after the truck was restarted as well.
You can change that in ForScan. Changes it to the "European" model where the seat belt chime does not ding at you until you get to 13 mph. One of the first things I did because I routinely get in, turn the truck on, then put my seat belt on, then close the drivers door.
Note, I'm adamant about seatbelt use - largely because I'm likely alive because I was wearing one when I was 16 and was hit by a drunk who was doing about 100 mph.

2) why run the AC when shopping instead of just logging in to the app and starting climate control when heading back out to the vehicle?
From FL, I'll give you my reasons.
Saturday I started the truck and disabled the countdown timer (leaving the truck on). So first stop was a little coffee shop, we sat outside and had breakfast as well, so probably there for 20 minutes. Then we drove to a local farmers market, probably there another 20-30 minutes. Other days we may have a Costco run to do as well, again another 20-30 minutes. So instead of having to pull out my phone and app each time, just keep the key with and hit the lock button. Also sometimes I just leave the phone in the truck as to not have distractions.

Leaving the truck running the whole time is so nice. Vehicle is always at a nice temp. Able to leave things like milk or fruits in the cabin without worry. Sometimes we have our dog with as well. So it's very very nice to do your errands on a weekend and just leave the truck running during the summer months (probably the same up north running a heater).
