I mean maybe I'm missing something, but that looks about as challenging as a winding, gravel road...
Yeah, I would feel comfortable driving that in just about any vehicle, unless I am missing something.

I have driven worse going apple picking or to a ski mountain.

I think The “one of the most challenging routes…” quote was referring to the entire Baja peninsula route. And not just the gravel road they happened to be on. Of course the challenge is how much off-road you do on the route compared to roads.

A week to drive 1000 to 1200 miles shows how time inefficient Level 2 charging is when you’re traveling. No wonder they used ICE power to get the trucks back.
